It is a mixture of handpicked and fresh onions, garlic, coriander seeds, dry grated coconut, cumin seeds, black cumin seeds, white sesame seeds, black pepper, cloves, cinnamon, star anise, dried red chili. Aaji is very particular about her proportions to get the recipe right and that’s what brings out the flavor of Kanda Lasun Masala. The onions are carefully dried and roasted at controlled temperatures along with all the spices. Perfect proportions are measured to then further blend them into powder.
